Au Cheval Burger
The Au Cheval burger is arguably the nicest burger in the United States and is definitely one of my favorites. With Locations in New York and Chicago, it is definitely worth a visit. However, if that’s not an option you can just follow my recipe.
Ingredients
Red Onion
Easy Singles
Coarse black pepper
Egg (optional)
80/20 Ground beef in 4oz Patties
Dill Pickles
Mayonaise
Dijon Mustard
Black pepper
Extra thick cut streaky bacon
Maple syrup
Processes
Put the bacon on a cold pan on medium heat and brush with maple syrup every few minutes.
While the bacon is cooking shape up your patties and put on a pan on high heat.
When the pan is smoking hot add some oil and your patties, season generously with salt and pepper, flip your patties, and season with some more salt and pepper.
Cut your buns in half and get them toasted.
We want to make a Dijonaise for this burger so in a bowl combine a squeeze of lemon juice a tablespoon of Mayonaise and an equal amount of Dijon mustard.
Add the easy singles to your burgers and allow them to melt.
Remove the burgers from the pan and allow to rest for a couple of minutes.
While you wait finely dice the red onion and cut the dill pickles into thin slices.
If you wish to add a fried egg you can cook it at this point.
Add a small amount of your Dijonaise to the bottom bun and place your patties on top.
Add more of the Dijonaise, pickles, red onion, and fried egg if you're having it to your top bun.
Put the buns together and attempt to get your mouth around the burger.
